Speedy Meatloaf

Serves 4

1 onion, quartered
1 clove garlic
1 stalk celery, chopped
1 small green pepper, seeded
500g lean minced beef
½ cup fresh breadcrumbs
¼ cup Anchor Whole Milk Powder
1 tsp ground ginger
2 tbsp each soy sauce, tomato sauce

Pre-heat oven to 180°C. Place onion, garlic, celery and green pepper in a food processor and chop finely. Add all other ingredients and combine well. Shape into a loaf and place in a loaf pan or other suitable dish. Bake for about 45 minutes. Serve hot or cold.

Cheesy Chilli Burgers

Serves 4

500g lean minced beef
½ small green pepper, diced
1 small onion, diced
1-2 tsp diced chilli
2 tbsp Anchor Whole Milk Powder
2 tbsp chopped coriander or parsley
60g Anchor Tasty Cheese cut in 4 equal portions
25g Anchor Clarified Butter, melted

Combine the meat with pepper, onion, chilli, milk powder and coriander. Form into eight patties. Place the cheese on top of four patties and cover with remaining patties. Pinch edges together to tightly seal in the cheese. Brush each side with butter. Grill over a glowing coal or under a medium-hot grill for about 3-4 minutes each side until cooked. Serve on lightly toasted baps or burger buns with bean sprouts or long chives. Top with corn (tortilla) chips, cheese and a tomato sauce or salsa.

Surprise Meatballs

Serves 4

500g lean minced beef
2 tbsp Anchor Whole Milk Powder
¼ cup dry breadcrumbs
2 tbsp finely chopped pickle
Salt and pepper
Filling: 6 medium mushrooms
1 cup grated Anchor Tasty Cheese
1 small onion, diced

Combine beef, milk powder, breadcrumbs, pickle, salt and pepper. Divide into four equal portions. Pat each portion into a round, about the size of a saucer. Dice mushrooms finely and combine with other fillings ingredients. Divide filling into four portions. Spoon each portion into the centre of the rounds of meat. Fold meat around the fillings to make four balls. Seal well. Cook under a pre-heated grill for about 4-5 minutes each side.
